Healthy Chocolate Peanut Butter Donuts

These healthy chocolate peanut butter donuts are soft, fluffy, and have a nutty peanut butter flavor! They are topped with a rich chocolate ganache which goes sooooo well with the peanut butter. No one will believe they are also vegan, gluten free, and healthy!

What kind of Donuts are these?


These donuts are baked cake donuts! They are soft and cakey like a cupcake, not doughy and greasy like the fried donuts! The benefits of cake donuts are they are not fried which reduces their fat content, therefore making these healthier! Plus deep frying is can be quite dangerous and is pretty tricky to do, getting that exact oil temperature. Deep frying wastes a ton of oil, too! Because these are made from a batter rather than a dough, these are much easier to make. You don't need to go through all the fuss of proofing, kneading, rolling, and cutting out the dough! These donuts can be made in a fraction of the time of traditional donuts!


The Donut Pan


The donut pan I use for these donuts are nonstick metal donut pans. They're really great since they transfer heat evenly throughout the donuts, creating a smooth browned top! You can also use silicon donut pans, that would make the donuts a lot easier to take out! Whatever you choose to use, be sure to grease your donut pans (even if they are non-stick!) to ensure the donuts come out cleanly.


If you do not have a donut pan, you can make your own using muffin tins. Look at this photo below for reference.


The Ingredients


These donuts are made from oat flour instead of regular flour which gives more fiber and nutrients! Plus oat flour is pretty easy to find/make. You can just blend some oats in a high-speed blender until it becomes a fine flour.


I am using a flax egg in these donuts to keep the donuts vegan. A flax egg can be made by combining 1 tbsp. ground flax/chia seeds and 3 tbsp. water. If you are not vegan you can just substitute this with a normal egg. Whatever you do, do not leave it out because it acts as a binder for the donuts and is a super important ingredient.


I add peanut butter to these donuts since they are peanut butter donuts, but really you could add any nut/seed butter you'd like! For example, almond butter, cashew butter, sunflower seed butter, etc. Do not substitute it with powdered peanut butter since we need the fat content of the peanut butter to make these donuts moist and delicious!


The vinegar in these donuts may seem a little odd, but it helps with the texture of these donuts! It reacts with the baking powder, helping the donuts rise and become fluffy! The acid in the vinegar also tenderizes the donuts.


The Glaze


We are glazing these donuts with a healthy chocolate ganache! This could not be simpler to make, just combine your favorite chocolate (I'm using sugar free, dairy free chocolate chips from Lily's) and some milk! Melt that in the microwave or over a double broiler until it becomes smooth and luscious! Now you can dip your donuts into the chocolate. Chocolate and peanut butter go so well together, and this match is perfect! If you place the donuts in the fridge, the ganache will set a little but will still be smooth and creamy.

Storage


These donuts can be stored at room temperature in an airtight container for 3 days. You can also refrigerate them for up to 7 days or freeze for up to 3 months. After freezing, make sure to thaw overnight in the fridge before enjoying. Freezing them may also change their amazingly fluffy texture, so keep that in mind.

Healthy Chocolate Peanut Butter Donuts

Ingredients


Donut:

  • 1 tbsp ground flax+ 3 tbsp water*

  • 64 grams (3/4 cup) oat flour

  • 1/4 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 120 grams (1/2 cup) milk of choice

  • 65 grams (1/4 cup) peanut butter

  • 38 grams (3 tbsp) granulated sweetener of choice

  • 1 1/2 tsp vinegar

  • 1/4 tsp vanilla extract

Topping:

  • 30 grams (3 tbsp) chocolate chips

  • 45 grams (3 tbsp) milk of choice

  • 30 grams (2 tbsp) peanut butter


Instructions


1. In a small bowl, mix together the ground flax and water. Set aside to gel for 10 minutes. Meanwhile preheat the oven to 350° F (175° C) and grease your donut pan with oil.


2. In a medium bowl, add oat flour, baking powder, baking soda, and salt. Mix together until combined. In a separate medium bowl, add your flax egg (or regular egg), milk of choice, peanut butter, granulated sweetener, vinegar, and vanilla extract. Whisk until completely smooth. Pour the dry ingredients into the wet and mix until combined.


3. Spoon the batter into your prepared donut pans. Bake for around 30 minutes or until cooked through. Cool for 3 minutes in the pan before transferring to a wire rack to cool completely.


4. To make the chocolate ganache, add chocolate and milk of choice to a heatproof bowl. Place it in the microwave or melt in the double broiler until smooth. Dip the donuts in the chocolate ganache. Take the peanut butter and place it in a plastic bag. Cut off a tiny piece of the edge of the bag. Drizzle the donuts with the peanut butter, and enjoy!

 

Notes


*You can also use ground chia seeds instead of the flax seeds. If you are not vegan, you can substitute the flax egg with a normal egg.
