Healthy Black Sesame Swirl Loaf Cake

This black sesame loaf cake has a super moist and pound-cake like texture! It also has a nice nuttiness from the black sesame that is the perfect combination with the sweetness of the cake and slight saltiness! Plus, this loaf cake is made with whole grains, and has reduced sugar and oil making it a healthier option!

The Ingredients


There are a couple of tricks to ensure that super moist and tender texture! First, we are using white whole wheat flour to make the bread light and tender. Regular whole wheat flour is really heavy and would make the bread dense, so white whole wheat flour is the best for the cake. You could also use whole wheat pastry flour or all purpose flour.


Also, we are adding oil to the cake to make it super moist. You could use any type of oil, such as grapeseed oil, coconut oil, canola oil, etc. Just make sure it doesn't have too strong of a flavor, such as olive oil or sesame oil.


Lastly, we are adding an ENTIRE cup of yogurt to the cake to tenderize it! Make sure to use runny, plain yogurt and not Greek yogurt since Greek yogurt is a lot more dense. If you only have Greek yogurt, no worries! Just combine 2/3 cup Greek yogurt and 1/3 cup water for a runny yogurt mixture that works perfectly in this cake!


Oh, and just one more thing. DO NOT overmix the cake batter as that will turn the cake super tough and dense.


Black Sesame Paste

Make sure you buy unsweetened black sesame paste with no other additives, so we can control the amount of sugar to add!


I used homemade black sesame paste. I just roasted sesame seeds, and blended them in a food processor until smooth and creamy. It took a while, but in the end it was worth it!

Storage


You can store this black sesame swirl cake in an airtight container at room temperature for up to 5 days. Refrigeration will dry the cake out, so I don't suggest refrigerating it. You could also freeze it for up to three months, and thaw it when you want to eat it!

Healthy Black Sesame Swirl Loaf Cake

Ingredients

  • 250 grams (2 cups) white whole wheat flour*

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 2 eggs

  • 100 grams (1/2 cup) granulate sweetener

  • 60 grams (1/4 cup) oil

  • 60 grams (1/4 cup) tahini/sesame paste

  • 1/2 tsp vanilla extract

  • 250 grams (1 cup) plain yogurt

  • 30 grams (2 tbsp) black sesame paste

  • 42 grams (2 tbsp) honey (optional)

Instructions

  1. Preheat the oven to 350° F (175° C). Grease and line a 9x5 loaf pan with parchment paper.

  2. In a medium bowl, add in white whole wheat flour, baking powder, and salt. Whisk until combined.

  3. In a large bowl, add in eggs and sugar. Whish vigorously until the sugar almost dissolves into the eggs. Next add in oil, tahini, and vanilla extract. Whisk until combined. Lastly, add in yogurt and mix it in.

  4. Add the dry ingredients into the wet and gently fold until combined. Do not overmix or the cake will become tough.

  5. Pour 400 grams, or half, of the batter into a separate bowl. Add black sesame paste to that bowl and mix until combined.

  6. Spoon the batter into your prepared loaf pan, alternating the white batter and the black batter. Swirl it around with a knife or toothpick. Bake at 350° F (175° C) for 35-40 minutes or until a toothpick inserted comes out clean. Do not overbake or it will turn out dry.

  7. Let it cool for 10 minutes in the pan before transferring to a wire rack. Brush with honey (optional) for a shiny, moist top. Let it cool completely at room temperature before slicing and enjoying!

 

Notes


*You can also use all purpose flour or whole wheat pastry flour instead of the white whole wheat flour.
