These Healthy Matcha Black Sesame Almond Cookies are sooooo soft, chewy, and delicious! The combination of nutty black sesame, earthy matcha, and fragrant almonds are so insanely good! It is like eating three cookie flavors in one cookie! These cookies are also vegan, gluten free, and made with good for you ingredients!
How do we get that texture?
The super soft and chewy texture comes from the nut butter! You could use pretty much any nut butter that has a mild flavor, but do keep in mind that some nut butters that are more runny may cause the dough to be more runny too. My favorite nut butter to use is cashew butter because it is just so creamy, thick, and the flavor is super mild.
We will be using an egg to bind the cookie together. A flax/chia egg can be substituted for the egg. Just combine 1 tbsp ground flax/chia with 3 tbsp water and let it sit for around 10 minutes before using in this recipe. You could also use aquafaba, the liquid from a can of chickpeas! Just measure out 1/4 cup of aquafaba and add it in the dough.
A combination of oat flour and almond flour gives the perfect texture to these cookies! Almond flour gives a nice butteriness to the cookies, and oat flour helps provide structure and lift. Do not use only oat flour or only almond flour!
The Flavors
The green part of the cookie is flavored with matcha powder! You can get matcha powder at any asian grocery store, or you could buy it online. Matcha has a super rich, earthy flavor that is amazing in baked goods! It also adds a really beautiful green color to your cookie!
The black part of the cookie is flavored with black sesame paste! Black sesame paste is basically ground up black sesame seeds, and you can also buy it in any asian grocery store or online. Or, you can make your own buy simply blending up black sesame seeds until it becomes creamy, just like how you would make nut butter. Black sesame has a really nutty taste and is one of my favorite flavors!
Lastly, the white part of the cookie is flavored with almond extract! I love almond extract and it gives such a nice flavor, but many people aren't fans of it so you could just leave it as vanilla flavored!
Storage
These cookies can be stored in an airtight container at room temperature for up to 3 days, in the refrigerator for up to 1 week, or frozen for up to 3 months. I SERIOUSLY suggest heating these cookies up, either in the microwave or in the oven, before eating because they are 10x better when warm!

Ingredients
130 grams (1/2 Cup) Nut Butter
1 egg*
80 grams (1/4 Cup) Honey/Maple Syrup
1 tsp vanilla extract
36 grams (3 tbsp) granulated sweetener
37 grams (1/3 cup) almond flour
60 grams (2/3 cup) oat flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tbsp black sesame paste
1/2 tsp matcha powder
1/4 tsp almond extract
Instructions
In a bowl, add in nut butter, egg, honey, vanilla extract, and granulated sweetener. Mix until completely smooth.
In a separate bowl, add in almond flour, oat flour, baking powder, baking soda, and salt. Mix until combined.
Pour the dry ingredients into the wet ingredients. Mix to form a wet cookie dough. Add more oat flour if the dough is too runny (but not too much or they will turn dry!)
Divide the dough into 3 bowls, each weighing around 127 grams. In the first bowl, mix in black sesame paste. In the second bowl, mix in matcha powder. In the third bowl, mix in almond extract.
Chill the dough for 30 minutes. Meanwhile, preheat the oven to 350° F (175° C) and line a baking sheet with parchment paper.
Scoop out 1/2 tbsp of each of the doughs and place them on the baking sheet together. Bake for 10-12 minutes or until cooked through. They should still be soft out of the oven, they will firm up as they cool. Enjoy!
Notes
* Instead of 1 egg you can use 1 tbsp ground flax/chia + 3 tbsp water, or 1/4 cup aquafaba.
