Healthy Brookies

These brookies are suuuuper fudgy and delicious! They have a brownie part on the bottom and cookie dough on top! These are also gluten free, have vegan option, and made with good for you ingredients!

The Brownie Part


The brownie part of these brookies are super chocolaty and fudgy! The secret- Nut butter! This gives the brownies that fudgy, moist texture and also adds healthy fats, protein, and other nutrients that you can't get from normal butter! Just make sure to use a mild flavored nut butter such as almond or cashew butter, so the strong flavor doesn't overpower the brownies.


To sweeten our brownies, we are using both granulated sweetener and honey. You could use any granulated sweetener you like- monkfruit, erythritol, coconut sugar, normal sugar, etc. Just make sure it subs for sugar 1-to-1! The honey in here helps retain moisture for the brownies so they don't dry out!


The egg will bind our brownie together so it doesn't just crumble apart in your hand. If you are vegan, you could totally sub a flax egg! Just combine 1 tbsp ground flax/chia with 3 tbsp water, and let it sit for 10 minutes to gel up before proceeding with the recipe!


A tiny bit of coconut oil will provide richness and help with the texture of these brownies, but you could leave it out if you wish for oil-free brownies. Cacao powder will give the brownies a chocolaty flavor, but you could also use cocoa powder. Cacao powder is just a less-processed version of cocoa powder that contains many nutrients and antioxidants. Baking soda helps give lift to these brownies so they aren't dense, and salt helps to enhance and balance out all the flavors!

The Cookie Part


The cookie part of these brookies are pretty similar to the brownie part. One difference is that we are adding brown sugar to these! Brown sugar has molasses in it and gives a nice caramelly flavor to the cookie part! You could also use a brown sugar substitute or coconut sugar. Also, we are adding vanilla extract, which really gives them that chocolate chip cookie flavor. Lastly, we are folding in Chocolate chips to this cookie dough because they melt in the oven and get nice and gooey!


Storage


These brookies can be stored in an airtight container at room temperature for up to 3 days, in the fridge for up to a week, or frozen for up to 3 months.

Ingredients


Brownie

  • 120 Grams (1/2 Cup) Nut Butter

  • 50 Grams (1/4 Cup) Granulated Sweetener

  • 30 Grams (1 1/2 Tbsp) Honey

  • 1 Egg*

  • 1/2 Tbsp Coconut oil

  • 17 Grams (2 Tbsp + 1 Tsp) Cacao Powder

  • 1/8 Tsp Baking Soda

  • 1/16 Tsp Salt

Cookie

  • 120 Grams (1/2 Cup) Nut Butter

  • 30 Grams (2 Tbsp) Granulated Sweetener

  • 20 Grams (2 Tbsp) Brown Sugar

  • 1 Egg*

  • 1 tsp vanilla extract

  • 1/8 Tsp Salt

  • 30 Grams (1/3 Cup) Oat Flour

  • 1/8 Tsp Baking Soda

  • 2 tbsp Chocolate chips (+ more to press on top)


Instructions

  1. Preheat the oven to 350° F (175° C) and line a 9x5 loaf pan with parchment paper.

  2. For the brownie batter, in a bowl, add nut butter, granulated sweetener, honey, and egg. Whisk until fully combined. Stir in the coconut oil. Add in the cacao powder, baking soda, and salt. Mix until a thick brownie batter forms. Cover with plastic wrap and place in the fridge while we make the cookie dough.

  3. For the cookie dough, add nut butter, granulate sweetener, and brown sugar to a bowl. Cream together vigorously, until the sugar almost dissolves. Add in the egg, vanilla extract, and salt. Whisk until combined. Add in the oat flour and baking soda and mix to form a cookie dough. Lastly, fold in the chocolate chips.

  4. Spoon the brownie batter into the pan and smooth it out. Dollop the cookie dough on top, and smooth it out. Press Chocolate chips on top, and Bake 350° F (175° C) for 20-25 Minutes. Cool completely before slicing, and enjoy!

 

Notes

*If you are vegan or cannot have eggs, you can substitute the egg with a flax egg. Just combine 1 tbsp ground flax/chia with 3 tbsp water, and let it sit for 10 minutes to gel up before proceeding with the recipe.
