The Ingredients
A secret ingredients makes these purple sweet potato brownies suuuuper fudgy and gives a lot of protein: white beans! You can use any kind of white beans: chickpeas, cannellini beans, soybeans. Just make sure they are cooked or from a can, and measure after cooking. Also, make sure the beans are white so the purple sweet potato color really shines through!
I used baked purple sweet potato in this recipe. I baked the sweet potato at 450° F (230° C) for around 50 minutes or until it is soft. Baking the sweet potato caramelizes all the sugars and gives them a nice natural sweetness! You could also boil, steam, or even microwave the sweet potato!
Storage
These purple sweet potato blondies can be stored at room temperature for up to 3 days, in the fridge for a week, or frozen for up to 3 months!

Ingredients
64 grams (1/4 cup mashed) purple sweet potato
45 grams (3 tbsp) nut butter*
197 grams (1 1/4 cups) cooked white beans
85 grams (1/4 cup) honey or maple syrup
23 grams (1/4 cup) oat flour
1/4 tsp salt
1/8 tsp baking soda
1/2 tbsp vanilla extract
Instructions
Preheat the oven to 350° F (175° C) and grease and line a 9x5 inch baking pan with parchment paper.
In a food processor or blender, add the purple sweet potato and blend it until crushed up.
Add in nut butter, beans, honey, oat flour, salt, baking powder, and vanilla extract. Blend until completely smooth.
Add purple food coloring if needed. Sometimes, the purple from the sweet potato reacts with the baking powder and may turn a bluish gray color.
Pour into your prepared pan and bake at 350° F (175° C) for 20-30 minutes, or until set.
Cool completely, slice into bars, and enjoy!
Notes
*Use a more mild flavored nut butter such as almond or cashew butter. Nut butters with stronger flavors such as peanut butter may overpower the blondies.
