Healthy PB & J Blondies

These pb & j blondies have that fudgy brownie texture with a delicious nutty, peanut butter flavor! It pairs perfectly with the sweet, tangy blueberry chia jam! These are also vegan, gluten free, and made with good for you ingredients!

These PB & J blondies could not be easier to make! They are only made with 8 ingredients that everyone probably has. They all come together with no fancy equipment, no chilling, you can eat it almost immediately! So, since this is such a simple recipe, I don't feel like explaining much.


The Blueberry Chia Jam


The star of the show here is the blueberry chia jam! You could use any jam you prefer, but to make your blueberry chia jam, just combine

2 cups blueberries

1 tbsp chia seeds

1 tsp lemon juice

In a saucepan over medium heat. Bring it to a boil and cook for 2-3 minutes, mashing the blueberries. Then, store in a jar and refrigerate overnight or use immediately!


Storage


You can store these PB & J blondies in an airtight container in the fridge for a week or freeze for up to 3 months.

Ingredients


  • 1/4 cup (38 grams) pumpkin puree*

  • 160 Grams (2/3 Cup) Peanut butter

  • 2/3 Tsp Vanilla Extract

  • 23 Grams (1/4 Cup) Oat Flour

  • 1/2 Tsp Baking Soda

  • 1/8 tsp salt

  • 67 Grams (1/3 Cup) Granulated Sweetener

  • 2 tbsp milk (optional)

  • Jam


Instructions


  1. Preheat the oven to 350° F (175° C). Line a 9x5 loaf pan with parchment paper. In a bowl, add pumpkin puree, peanut butter, and vanilla extract. Mix until smooth.

  2. In another bowl, add oat flour, baking soda, salt, and sweetener. Whisk until combined. Add the dry ingredients to the wet, and mix until incorporated. Add 2 tbsp milk if batter is too dry.

  3. Press dough into pan and spoon on chia jam. Swirl it around, then bake at 350° F (175° C) for 12-15 minutes. Cool completely, slice into bars, and enjoy!

 

Notes


*You can use any fruit puree, such as apple sauce, mashed banana, etc.
